| Dear Home Cook, Every year, one of the most exciting times around the office is when we get our printed copies of The Old Farmer’s Almanac. We had everything from family classics that were passed down through the generations to some pretty interesting ideas that we can say were truly unique. Honestly, though, there wasn’t a bad recipe in the bunch. What, exactly, makes a winning pasta recipe? We probably aren’t giving away any secrets when we say that they’re all made with love. At least that’s what we think was in these. It may have just been extra garlic. But aren’t garlic and love almost the same thing? In all seriousness, one of our winners is a Spinach Artichoke Dip Stuffed Pasta recipe. You get delectable artichoke hearts, along with tangy Parmesan and mayonnaise, mixed with fresh and dried herbs for a delightfully rich pasta dish that’s sure to please even your most picky dinner guest. There’s a little crunch in this recipe, too, that we bet will put a smile on your face. And for those days when you don’t have much time to cook dinner but you still want something tasty (and award-winning!), try the Quick Southwest Pasta that made it into our Winners’ Circle. The second ingredient is chorizo pork sausage, so you know that you can’t go too wrong, even if you try. Even better, you can have this meal on the table in less than 30 minutes, but you won’t miss out on any taste. How about Bacon Horseradish Penne Pasta Salad? It has “bacon” in the title, so you know that this is a winner. Or there’s Raisin, Pine Nut, Swiss Chard, Apple, and Sausage Pasta. That one’s got a little something for everyone, including a touch of sweetness with the apple and raisins. Craving Coconut? | After all that pasta, it’s only natural to have dessert, right? How about Coconut Cream Pie or Lemon Coconut Cookies? We have those recipes for you, too. And if you use a fresh coconut to make the recipes, you get the bonus of a delightful glass of coconut water. Plus, coconuts are full of vitamins and minerals, so you could argue that the pie and cookies are good for you. They’re certainly good for your happiness levels. Don’t take our word for it, though. In the 16th century, Portuguese sailors thought that the three indentations on the shell resembled a grinning monkey, so they called it coco, from the Portuguese word for “grinning face.” English speakers added nut later, presumably because they thought that it looked like a large nut. Incidentally, the coconut isn’t actually a nut—it’s a fruit. | | Food Trends | Pasta. Coconut. We’re definitely off to a good start, but what else can you expect in kitchens and restaurants this year? If you’re planning a night out, you might be able to catch your own fish from in-restaurant tanks. Some restaurants are offering fishing poles and bait to diners for a true fresh fish experience. If you decide on the steak, you won’t have to catch your own, but you can order from a menu that lists the animal’s feeding regimen and age at “harvest.” In your home kitchen, you might find algae protein bars and shakes or fruit with the taste and texture of meat, such as grilled watermelon “ham,” cantaloupe “burgers,” toasted coconut “bacon,” and pumpkin “ribs.” For those times when you don’t want to go out but don’t feel like making dinner from scratch, you could join the 9% of Americans who have tried a meal kit, or the 40% of Millennial parents who eat their kids’ leftovers to avoid waste. Eat Your Colors | You don’t need a big plot to bring some extra-special treats to your table. In fact, a few flowerpots can give you plenty of color and taste when you grow the right flowers. Pansy and violet petals and leaves are edible, as well as full of vitamins A and C. Pick the mildly mint-tasting pansy flowers and the stronger-tasting leaves in the morning when their water content is at its highest. Add colorful, fresh blossoms to green salads, soups, and desserts. Freeze the flowers into ice cubes. Decorate a cake or mix smaller violet petals into cookie dough. You can also use pansies for medical purposes, at least according to folklore. The Celts believed that a tea made of dried pansy leaves would cure a broken heart, while some folk advice suggested gargling with pansy tea to cure a toothache. In fact, pansy folklore goes back as far as ancient Greece. And the flower has a secret history as a password for the followers of one of the most famous figures in history.
